I was driving in to work this morning and noticed that the coolant light was on. My radiator reservoir looks full and my temperature never went about 95C which is the typical running temp for this car. What does that light indicate?

To answer your title, it means only an idiot would trust it... :)

To answer your question on the coolant sensor, I suspect it is a poor connection, faulty float/sensor, or similar issue. I took mine apart, cleaned all I could reach, and have had no recurring problems.
