i see them on many engines but what are these plugs for?

Can be many things, like different equipment fitted to engine: pumps, extra cooling, things driven by engine and so on.. Could also be for tools when engine was built, but just guessing.

Are they core plates (for engine casting) or freeze plugs? Those don't usually have fasteners tho, they just press in. Anyone? Bueller... Bueller?

Freeze plug. I just changed one out on my M129. pn=180 015 08 05

no need to change them, honestly. I would take them out, clean them, and replace the gaskets underneath them.

there are specific gaskets, but I'm sure you can make them yourself. the OE one is not expensive, either. about $3.

those are freezing plugs but also used to remove inside dirt on the block. If you pull them out use a screw driver, a hose and start removing inside corrosion deposits. You can built your own gaskets.

you will need 5 130 015 00 05 , and 2 180 015 08 05 plates , gaskets are in the gasket set 130 010 97 08 . you will need a torch to heat up the screws a few times , or they break like glass .
