has anyone had trouble trying to shift into gear when the car is cold and/or when its wet out. even with the clutch down, you have to push quite hard to "pop" it into gear...

I'm not familiar with how your clutch is set up. However, through the years I've seen similar problems on various makes. The first thing I'd look at is if you have a fluid clutch, check to make sure the fluid container is full and that the clutch is working properly. Depending on how many miles you have on it, your throwout bearing may be getting worn or you might even have the wrong lubricant in the transmission. My money would be on the clutch not releasing all the way.

Pretty normal behavior.

Try to move the shift lever IMMEDIATELY after depressing the clutch, i.e. while the gears are still spinning. Shifting to second and THEN to first might help, too.
