Is it possible to resurface cross drilled rotors?
Or will the holes cause possible damage to the rotor
lathe if the cutting tool hangs up on a hole?

Local auto shops seem reluctant to turn down
the cross drilled rotors.

You're up against two obstacles:

1) you shouldn't resurface Mercedes rotors. With the exception of the AMG models and some of the OEM cross drilled rotors, they're cheap enough to replace. Resurfacing often results in a warped rotor or uneven surface.

2) you shouldn't resurface cross drilled rotors. You may remove too much of the chamfer used to relieve stress in the drill areas, which helps reduce cracking of the rotors. (A person skilled with using any lathe would not be worried about the cutter being hung up in the hole.)

So it seems that you should probably just not do it.
