Should the Aux fans kick in when the A/C is turned on, regardless of temp?
Mine DO NOT come on...

I would like to know as well. On my E220 the aux fan doesn't come on when the A/c is switched on, but it does come on when the car"s temperature reaches about 90 degrees C.

They should come on when the AC kicks in, yes. I read that if your freon is low, that won't trigger the sensor in the AC to message the fan relay.

If the A/C gas is low will the compressor still kick in?
The compressor should kick in yes, when called upon to do so. I'm not sure if it's thermally protected; in other words if it runs really hot some compressors will shut down/off. If you have a drastic leak and little freon left, I'm not sure what happens in the sequence of things.

If the system is just low on freon, then the compressor should come on anyway, but your air into the cab will not be cold. It's easy to hear it click on while under the hood.

Well, I would think about replacing the AC sensor that signals the fan relay (assuming your aux fans work) and then get the system recharged. If you have to lose freon by replacing the sensor, it doesn't make sense to replace it after the system is recharged and your fans still won't come on. Offhand, I don't know how much the sensor costs.
