I'm wondering if I change my oil on ramps whether the slope of the car
will keep all the oil from draining.

Depend. If your drain plug is facing rearward then it will be okay. If it face to the side then the opposite side of the drain plug sohould be higher.
On my GMC G25 I did it on my elevated driveway using no jack. I'm pretty big but I can fit.

The car being raised up in the front on jack stands or ramps would let a large quantity of oil be remaining in the main crank tunnel. Make sure the car is on level ground or on a rack.
