I just purchased a 1998 E 430 sport with 62,800 miles on it. I really like the car, but am use to driving a stick and don't like the delay from the time I hit the gas to the time the car moves. If at 20 mph, I stomp the pedal to the floor I actually have to complete this sentence "OK, get ready. Here we go." Then it's like being shot out of a small cannon. Is there anything I can do to cut down on the reaction time of the engine to the accelerator pedal?

Second question. Where can I find parts to increase the horsepower of my E 430 sport's V8? Which mods are the best for the money?

Is there a possibility that it's not the reaction time of the engine, but from the gearbox?
We've felt the exact same way when we got our 320cdi. The gearbox is just sooo slow... (Or is it just the 320cdi engine which is slow in reaction?)

Aren't there any 'chips' that make the auto box peppier?

This is not the first time I have heard of such a complaint against the 430 engine/ gearbox combination. Previously someone complained on this forum of a similar problem, and another member managed to help them out in some sort of way (can't recall). Best advice I can give you is to do a search and you shuld be able to find what I'm talking about.
