For those who know this, I didn't, pls disregard. For those who don't:

Press the remote's unlock button, release it, then press it again and hold it down. All windows and sunroof open. Repeat process with lock button and all close. Doesn't work from distance though. Have to point remote to what appears to be sensor on drivers side door handle.

With the remote, does anyone know how to open the windows only? I don't want it to open the sunroof.

I don't think you can program out the sunroof opening. As stated before the only downside is that the key has to be aimed at the ir sensor on the driver door handle. The only exception to this is the new SL r231 use the radio frequency to open the windows/roof, so you can put the top down from anywhere around the car and from quite a distance away. (The car may need to have keyless go to use the radio convenience opening)

It actually worked. After I washed my car today, I lowered all windows with "the express way" (hold down "open" button") so I could clean the top rim of the windows' glass. While playing with sequence of buttons on the remote, I "accidentally" made all four windows to open without opening the sunroof. Wow!!! And then I got inside the car, put the key in position#1, press and hold the sunroof button to close for a few seconds, that action toggled the "only windows, no sunroof"open mode to "windows and sunroof" mode. So there is a way. Owning the car for 13 years and there's still some mystery about it.
The problem is I can not remember the initial steps.
The dealer must have the answer. I will ask them on the next trip there for parts.

Per mbvis experience, tried different sequences with no success. If anyone comes up with anything, pls post.

If anything, my preference would be to open the sunroof and not the windows. Remember the unreliable window regulator issue.

Well, I thought about that. But all my car(s) but one have had one broken rear window regulator, I doubt that the rest will break. The broken side must have been where the afternoon sun shone on to "dry off" the plastic clip.

Over the years I have had only one window problem and it wasn't too bad to fix but 2 sun roof problems and they cost a fortune. Here is sunny Arizona I would much prefer to lower the windows many times a day to cool the car before getting in and leave the sun roof out of it. Other that pulling the fuse, anyone know how?

That also could be the result of your sunroof being out of synchronization and that is why express mode did not activate it?
Our sunroof is loosing synchronization quite often.
Often for us is 2-3 times a year because this is how many times we use the sunroof. Not good under CA sun -nice while cruising Las Vegas Strip at 2 AM.
