When I start my 1980 450SL after it has not been run for 8 hours or so it does the same weird thing every time.
Fires right up.
Goes to 1400 RPMs for 2 seconds
Goes to sub 500RPMs for 5 seconds
Then if it does not die it goes back to 1400 and is happily ever after.
If it dies, I start it again and it repeats the cycle except that the sub 500RPM time is only a second or two and then it is fine.

Any ideas?

For what it's worth..quite posibley nothing. When it's cold the number 5 injector advances fuel to aid in cold starting. Might it be that injector is clogged and not operating properly? Or perhaps a bad ground wire to that same injector and not getting the proper cold start message? Just a thought from a 90% novice.
