if you want to cover them because of cold air coming from the center ones, try adjusting them first.
if you take a look inside you will see a small hex key screw. sometimes it loosens itself or someone didn´t adjust it the right way after pulling the center vents. the screw is connected to the center flap, which regulates the fresh air flow. by adjusting that screw you also adjust the position of this flap.

Thanks you it's feels like the AC is on all the time in the center vent even when heat is on
I've read in some W124 sales brochure that the center vents are suppose to allow fresh air when the heater is on to prevent occupants from suffocating. You can press the re-circulating button if the air is too cold. But, it will revert back to allowing fresh air after a few minutes, again, to prevent suffocation.

As suggested, you can manually shut the vent by rolling the adjustment wheel to 0. If there is still air coming you can adjust the shutter by turning the vent's adjustment (Allen) screw.
