I have heard different things.

what is the correct idle oil (15w-40) pressure for a 1980 300D, 222xxxmiles?

Mine is 1.5 - 2 and it goes up to 3 immediately with acceleration.

Thanks.

The oil pressure at idle depends on oil temperature and oil viscosity. There is no "normal" value, only a minimum value (0.5 bar, on certain models even as low as 0.3 bar). Oil pressure should go up to maximum when you press the accelerator pedal. Should be 3 bar at 3000 rpm, although the maximum pressure will normally be reached at much lower rpm.

Having said that, 1.5–2.0 bar is quite normal.

I use Rotella T 15W-40 in my '83 240D with ~380K miles and once fully warm the oil pressure gauge reads about 2 at idle and the needle is pegged as soon as the revs increase.
