I have an 02 E320 that came up with a code showing low efficiency in bank 2 (passenger side). I'm going to replace it but I am planning on taking the car on a 500 mile road trip in about a week and was wondering if I should have it replaced or not before I get back?

Did you also have a CEL or was this just a code scan you did to see if all was well?

If you didn't have a CEL, I wouldn't even worry about replacing the cat, now or later. Transient conditions can throw all sorts of pending codes, which don't really mean much by themselves.

If you got a CEL with that code, though, then you can drive the car normally until you get around to changing the cat. No rush on it.
