The u-joints seem to be pressed into the flanges of the driveshaft. What's the best way to replace them?

Those appear to be staked u-joints, which means they are not a replaceable item. I ran into the same problem when I had a u-joint fail on my old W460; I ended up taking the driveshaft to a local machine shop/driveshaft specialist and had them cut the yoke off and replace it with a replaceable type u-joint yoke.

Take to a diesel driveshaft shop, they can probably replace it.
