I have noticed that my newly aquired 87 300d has a short and sudden burst of acceleration while I am driving as if the "resume" on the cruise control was activated. This only has happened a few times in the 2 weeks that I have owned the car, and the gas pedal goes down by itself under my foot, weird. Has anyone ever heard of this? I hope we don't have a runaway Toyota situation here, lol.

You should check the throttle linkages between the cruise actuator and injection pump. When I bought my '90 300D it was doing this as well. I ended up having to replace a couple pivots and linkage rods as a fix. This is something you'll want to resolve earlier rather than later.
