Does the coolant have any other function then to cool the engine? I'm not sure how complex the ML is.

-Water actually is the medium used to transfer the heat from the engine. Coolant is added to lower the freezing point and raise the boiling point of water. In addition as stated before, coolants also have various formulations for certain engine materials to prevent corrosion.
At a minimum, change your coolant on the recommended three year interval and use MB coolant.
