I've just got a 1.8 1991 manual. The gearchange is a bit difficult and gearing seems wrong. Very low first and 2nd then very long 3rd. This makes town driving a bit difficult. I've only had the car a couple of weeks and I'm getting better at choosing the right gear for the right situation but even so there is a definate lack of torque at low revs.
On the motorway above 60mph the car is fantastic and will cruise at speeds of 90-100mph very well. I recently got about 33mpg(imperial) on a long trip doing 80-90mph. Around town gives about 25mpg.

If the carb car has more torque I would go for that instead.

I would also consider an automatic as it will makes things a lot more relaxed.

I'm in England so I know what you mean about the manual transmission. It will provide a bit more acceleration.
Try to test drive some cars to get an idea of what's good and bad.
