You are supposed to drain it from ths pan underneath. Trans fluid is then pumped into the pan with a machine, after you drop the pan, change the filter. This is pretty much how we do a trans service. If you must do it yourself, there is a dipstick tool you need. The cap comes off usually by breaking a tab off, then lifting the cap off. You can fill it with a funnel from the top. Roughly 3.8 qts.
This procedure is for the 722.6 5 speed transmission only, not the 7 speed.

Only the 5 speed 722.6 can be filled from the top.
The 7 speed can only be filled via the pan drain hole,,by pumping the fluid up as per Rudeney's post.
