Help with replacing a thermostat assembly

I'm needing info about replacing a thermostat assembly on my 2009 E350.
My check engine light came on. I went by advance auto and the guy there told me it has a P0128 code and that I have thermostat trouble. Is changing the assembly a pretty easy fix? What would be difficult about changing it?
