regarding motorcycle shops - I haven't owned a bike since 1990 so not really up on the scene. There is a place called Iron Cycles in Jamesburg, and a Harley place in Trenton - and one just over the NJ/PA border in Langhorne. I would check with those places.
The area is largely farmland so taking the long way through Trenton and Lawrenceville and Princeton, should be a nice ride. Mostly one lane roads, so you will eventually end up behind 'that guy' who drives 5 under the speed limit. The drive will be reasonably scenic, though probably not 'spirited'.
For out of towners looking to stay, I recommend something in the heart of Princeton, where you can park the car for the night and walk around the town. Many good bars and restaurants (some BYOB so be ready). And The Bent Spoon homemade ice cream shop is a must.
