Poor throttle response

After having my S55 AMG sit in the garage for 3 weeks I finally got the thermostat housing back on the car and running. I took the car out after letting it warm up and did some spirited driving and wheel spinning and after pulling over and checking for leaks or other issues from sitting, I got back in the car turned it on and took off, but almost immediately I noticed that the throttle pedal had to be pressed very far to get the car to go anywhere and would slowly add power back in but nowhere near enough to spin the tires or accelerate hard. I stopped did a throttle position reset but the problem persisted. Finally, after letting it sit for a few hours it went away. It almost sounds like limp mode but it went through all gears and would go faster than 55 mph. If anyone knows why this was happening and how to keep it happening in the future that would be great.
