'96 e300d thermostat

Need to replace the aux pump thing. Figure change stat too, however seeing various temperature values. What would be proper?

Part crucial for proper car operation you should buy only from sellers who can match the part to your VIN.
Diesels of the era had lower temp thermostats. For my 1998 diesel thermostat was rated at 83C, what kept the engine at 78C on normal cruising.

If an 83c thermostat kept the engine at 78c, it wasn't working correctly.
The operating temp will always be slightly above the marked temperature of the t-stat. You should have been running about 85c.
Thats why, for example, normal working temperature of a W123 300D with an 80c t-stat is 82c.
