What are "safe" parameters for torque in tune?

I'm new to MB coming from a tuned BMW M235i. Got a 2012 CLS63 AMG this week. It is an awesome looking car but it is HUGE and I think its mass creates its own gravitational pull bending walls inward as I try to make it through narrow drive-in lanes. And that exhaust sound - it is so addicting! I prefer to listen to that than the stereo! LOL. Still feeling a bit like I got out of a go kart and into the Space Ship Enterprise. Not a bad thing, just different and still getting used to her size.

The one bad thing I noticed is that the power seems to be hidden away at times. Under certain conditions it really moves nicely. Other times the throttle response is just too slow and it isn't working to its potential. Nothing a good tune probably can't fix. But considering the cost of tranny repairs for this cars, I want to make sure I do not push the limits too far. Anyone know where to get info on torque as in how much can be safely dialed up? I've read that the ECU limits the torque quite a bit to protect the transmission. I've seen quite a variance in the range for both HP and torque output among various tunes. I'm not interested in getting every last drop of performance but I want as much as she can put out without sacrificing reliability.

BTW, I'm in SoCal where pump fuel is 91 octane. Not interested in using additives, filling up with $10 a gallon racing fuel, or mixing E85 in the tank. Just want the most I can get out of her as a no fuss fun daily driver.
