I’ve only used this setting once to check it after servicing, the thing that surprised me was just how long it took to get up to 75° C ( I think that was what I was looking for) , I would presume the only way to get it to overheat would be to tow a really heavy trailer for too long.
With the Autel 802 (mine is the all systems version as versus the basic 4 component one) plugged in, start the engine and scroll through until you find the gearbox temp setting. Go for a drive, quite a long one, with the 802 connected and running until it reaches the right temp, 75° I think, then stop and check the levels on the dipstick.
