I've had both in the past. The Bilsteins are harder compared to Sachs. Bilsteins have a lifetime warranty never to sag and I am proof to this. My old 124 had them for several years without signs of wear. Sachs on the other hand is comparable to stock ride however shares the same lifespan. My sachs shocks sagged after 20k miles.
Overall they're both good brands but I'd take Bilsteins anyday.
Also the Sport version of Bilsteins have a shorter shaft to accomdate shorter springs unlike sachs.
Definitely go with Bilsein if you plan on lowering the car as the sachs will wear out easily with the shorter spring.

1. H&R springs, stock shocks - too bouncy
2. H&R springs, Bilstein Sport shocks - too firm
3. AMG springs & shocks & sways - pretty damn good
If I still had it, I would have also tried the Vogtland springs with Koni adjustable shocks.
