Just got my Mercedes E320 99 and 80k miles on it. Went to dealership and asked for oil change. Mechanic put castrol semi-synthetic 5w30 short trip protection....
After 2k miles the message: "Oil level at minimum" showed up. I checked the oil manually and it was a little more than a half. So I added 1QT. In about 1k miles the same message showed up. So I checked car for oil leaks but didn't find anything. There no oil on my parking lot.
Where does the oil goes? Anny opinions appreciated.

If you have established that there is no leak, then your engine is likely burning the oil. You may or may not see blue smoke in the exhaust as the cats can suck it up.
Some early model year W210s had non-synthetic engine oil used in conjunction with regular, extended FSS intervals. This created some sludged-up engines that - either due to premature wear or sludge buildup - started to use oil. Reason being conventional oil was never intended to go for 17,000-20,000 Km intervals.
My E430 was in this boat, and it currently uses about 1L/2200 Km, which I can live with. I've been doing frequent changes with MB 229.5 spec oil/fleece filters and the consumption has improved.
Mercedes' position on the matter is that 1L/1000Km is acceptable. So unless your car is using more than this, there probably isn't too much you can do. There is a lawsuit in the US that has resulted in some engines being replaced under warranty. This involves the dealer establishing a baseline and measuring consumption. I think the window for the warranty is 10 years/150,000 miles. Not sure though.
Definitely change to a proper oil and filter asap, then continue to monitor consumption. Good luck!

It's hard to believe that a MB dealer put non-MB spec oil in for you. I would take it back to them and ask them to redo it with the proper Mobil1 0W40. FWIW, there is at least one German-made Castrol fully synthetic that meets MB specs.

Our ML320 was driven for about 40,000 miles on dino oil with 13,000 intervals. It never did use oil between changes and stays this way getting close to 100,000 miles.
None of my several Mercedes would burn oil. The 1983 model needed some additions, but it was dripping so don't think the 230,000 miles run on dino oil made it burning it.
I know MusicMan researched the issue, but I would at least try one of those engine treatments.

Some MBs have a pan under the engine to protect it. I had an oil leak (rear main seal) that was evidently being caught by this pan and I never saw any drops on my driveway. So you might have a leak. My car also uses oil, and one quart per 1000 miles is my approximate usage.
Like Kajtek1 said, I researched it by having an oil consuption test done at the dealer. Before starting these, the tech checks for external leaks and that is when mine was discovered. He replaced the rear main seal and then changed the oil, filling it to the maximum mark. I was told to drive 660 miles (1000 km) and bring it back. They measured what I had used and it came to about .45 liters. That less than what MB considers abnormal (=/> .8 L per 1000 km).

Then perhaps you have been lucky. My car and engine have both been babied since Day 1. All records. First 100,000 Km or so was all done at the dealer in Toronto (flagship dealer). All services stamped. My car switched to synthetic at approx. 80,000 Km. In my case, the consumption began at around 130,000 Km. It was bad at first (>1L/600Km!), but after some treatment it has levelled off to where I am ok with it.
My previous two Mercedes did not burn any oil at all. My mother-in-law's 1997 E320 also does not burn any oil. The crankcase on my 300E was gleaming white metal, even after 300,000 Km on it. In comparison, from what I see from the filler cap on my E430, the crankcase is dirty - some sludge and varnish deposits. With frequent oil changes, it does seem to be getting cleaner.
One thing in common with all of those vehicles is that none of them went over 10,000 Km between oil changes on ANY kind of oil.

I do consider myself lucky, but statistically speaking what are the chances to buy 10 (only 1 new) MB cars and have perfect luck with them? I bought 1 BMW and that was a financial disaster.
The only difference I see between me and most of this forum members is, that I go all the way between oil intervals, what is about 13,000 miles on gassers and 10,000 on diesels. Even on old Dino oils (before FSS) I was keeping about 7500 miles and was pretty flexible on the schedule. Our 1984 Volvo went on the junk yard for cosmetic reason with 174,000 miles on still perfectly running engine. I remember adding very little oil to this one.
So I am going to think about conclusion that too frequent oil changes makes the troubles.
