While looking for a W210, I've noticed a few, newer ones, with pinstripes. I am assuming they're NOT original. Anyone know if ever they were added at the dealership?

Yet one of the many ways dealerships make money (that's how mine came to be on the car). And of course there are lots of shops that do such work, sometimes under contract with the dealers and sometimes just independently.
I don't think any W210 ever left the fatherland with pinstripes.

None of the W210 I know of came with OEM pinstripes. I have seen some here that have a distinctive dealer's style but mine are different and I don't know where these were done. I considered having them removed before realizing that I'd probably lose some clearcoat during the buffing process.

Mine is striped. There is a tasteful M-B star on each front door, in an interruption of the striping.
I do like the striping, but it is coming off. I have some repair work to perform on the left-rear quarter panel and the stripe will be obliterated at the very back. I believe that I can sand it off without removing all of the clear coat, but I'll have some clear around right about then anyway.

Since you mentioned that Matt, one of the dealers in Kentucky uses the star interrupting a double stripe too but I can't remember if it's on the front door or the fender - toward the front anyway. I would call theirs tasteful also. I remember one black car with gold stripe/star that was striking.

Our 2002 E430 Special Edition in Silver had a black pinstripe from the factory, or at least the dealership. It looks like something the dealer may have added, but I honestly don't remember an additional charge for them.
When I can get a hold of them at home, I will look at the original sticker and documents generated at the time of purchase so I can let you know for certain.

Those special editions are such rare birds that it would not surprise me if MB added your pinstripes. But overall, they seem to be a dealer add-on. I am curious if you were charged extra for them. Please do post a follow-up.
