The Mercedes manual lists 1.4qts of differential fluid required. The DIY used 1qt of Redline fluid. Is this ok? Or purchase 2 bottles and use 1.5 bottles to meet specs?

You definitely need more than one quart. How much exactly you need (more than 1 quart) is really not that important because you stop adding fluid when it overflows out of the fill hole.
As for capacity, different models use different differentials so the capacity could be as low as 1.1 liters (almost 1.2 quarts), 1.3 liters to as high as 1.6 liters.
Your 1997 E420 uses 1.3 liters (about 1.4 quarts).
