I tested a 1996 C280 Elegance prior to my purchase of my 1999 C280 Sport Edition with the V6 engine.
The difference was that the acceleration. The Inline 6 needed more time to pickup speed. The V6 has more power and more torque, and it runs smoother than the inline 6. In normal driving conditions the V6 picks up speed fast.

I think the reason you experienced this is due to the trans more than the engine itself. The 96 had the vaccum controlled 4 speed. The 97 is the only year with the 722.6 trans bolted to the I6 engine. I know this because I had a 95 C 280 before my 99 C 280 Sport and the trans made a world of difference between the two. I would have to say the major differences between the two engines is smoothness. The I6 is WAY smoother than the V6, bot overall, they're about the same. Also the V6 is noisier than the I6, but under heavy acceleration, the V6 sound meaner than the I6.
