Hi there, your engine temp should be around 80 C while driving in town and under that bar (80) on highway. If it reaches 100, you should have your radiator checked as well as your fans. I had a problem last spring. The thermostat did not operate well while driving in the country. To make a quick fix, I removed it until I could have it replaced. How humiliating it was having a Benz parked on the side of the road on a Sunday afternoon...[:0]

No the proper operating temp is what ever the rated thermostat is (stock is 87c)and should be hovering around the 90c mark.[;)] If by chance you notice that your Aux Fan (when the A/C is not engaged) is constantly coming on then it would be time to check the Fan Clutch assembly. In your case all you have to do is try and spin the Fan when the engine is off - there should be noticable resistance.
I have an 85 190D and my temp in Chicago city driving is generally just above the 80 on the gauge. If I am in stop and go and have the A/C on thr it hovers just below the next line up.
