Well lets start a checklist, of which I might need some help getting everything. Stuff to check in no particular order:
Spark plugs
Spark plug wires (and connectors)
Distributor cap
Distributor rotor
Fuel filter - [already done]
OVP Relay (its behind the battery)
Fuel pump relay
Now slightly harder stuff to check:
Fuel pump(s). Later models have two pumps
Air flow meter, and if its travel is smooth
Idle Control Valve, this might be where your idle problem lies
Injectors
O2 Sensor
You forgot the "it's a highway cruiser it's not supposed to launch like a pony car" bit.
But, seriously, I think that's most of it.
I'm not a fan of this fuel injection system at all. Too many things just don't make enough sense, and the parts that go bad cost hundreds of dollars. It makes more sense to me to just scrap it and make your own intake and fuel system with MegaSquirt. You gain power and economy, and by making it on your own, you learn the system and it's faults/failure points.
One thing I do to all my cars is replace all the rbber parts in the engine compartment. you can do the vacuum lines for about 5 bucks and it make a HUGE diff.
