I've got a '99 ML 320 that always shows this on the temp display. Has anyone experienced this particular problem? I searched but it seems like the most common problem is the light going out.
Definitely means the temp sensor is not functioning. Open your hood, towards the driver's side of your bumper grill (in front of the 2 aux.fans) you should see the temp sensor mounted into the bumper (it clips in). Follow the lead, find the connector and plug it in if disconnected.
Thanks, if the sensor is supposed to have a plug with two wires go into it; I guess mine is missing. I see the plug hanging and what looks like a spot for the sensor to clip on, but no sensor. My girlfriend bought the truck used a few yrs ago.... maybe some forgetful bodyshop worked on it.
There are normally a couple of plugs and leads hanging there (for external foglights and block heater if you have). Find the spot where the temp sensor mounts into the bumper and work from there. To get to it you can also unclip the small bumper grill in the middle of the bumper (it pulls of easily) to see the mount - it is a little round hole in a plastic tab attached to the bumper, towards the driver side of the car but still in the bumper grill opening. If the temp sensor is there, it looks like a small black "pencil" protruding through the hole. If it's not there and not hanging somewhere behind the bumper, it is probably gone.

Anyway, temp sensor may be bad.
