The FI pump may not be the reason you are running rich. How are the plugs, points and timing? I would check to make sure all the linkages are adjusted correctly. The cold start valve could be leaking. The warmrunning device (thermostat/heat feeler) on the FI pump could be stuck. You will need a CO meter to adjust the idle mixture on the FI pump to 1-1.5 %. Only adjust the idle mixture screw with the engine off. You push in and turn left for lean, right for rich.
As for a manual you should be able to find a Chilton's, Haynes or the Mercedes Service Manual passenger Cars Starting 1968 series 108 109 111 113 maintenance, tuning, unit replacement on line (Ebay). The Classic Center also has the manuals on CD/DVD.

Spend some time here (you have the same engine as the 280SL):

Pagoda SL Group Technical Manual :: Fuel / Injection

Especially the linkage tour:

first , set ignition timing at 5 deg BTDC , dont use the vacuum retard at all , just leave it off .as to adjust fuel mix , in your case , you can do a lot with just adjusting the rod that goes down to injection pump .this as a big effect on fuel mix . there are 2 ball sockets at this link , one is a left hand tread , the other a right .you will adjust the right one one turn in .to see the treads way , put the link in front of you in a vertical way , the right hand tread will ramp up to the right , the left to the left .so you want the rod shorter by one turn .look at the plugs to see what color they are [ just look at one ] a rich car will be black , a too lean will be snow white .a light brown is close to be right . there is a way to set the all system right , but it takes some know how .
