This looks like plenty of fun (and work of course). The major issue with such a project will be parts, parts and parts. But from what you have said here, you got yourself covered in this department.
Otherwise these early Benzes are pretty straightforward to work on, if one knows, what one is doing. So I wish you not only luck, but most importantly: perseverance!!
