You might want to decide what body style you really like first. It sounds like it might be the w108 (a sedan) that you've honed in on.
There are a lot of variables to chose from, but it still probably makes sense to decide:
- sedan, coupe, or roadster
If you chose sedan, you could chose the "S Class" (top of the line) or (what later became) the "E Class" (middle to bottom of the line).
With the S Class Sedans:
W111/112 --> w108/109 --> w116 --> w126
With the E Class (coupes and Sedans):
W114/115 --> w123 --> w124
S class Coupes:
W111 --> c107 --> w126
W113 --> r107 --> r129
Perhaps some people whole know the oldies better can add onto the beginning of the line.
Take some of those chassis numbers and do a little reading on Wikipedia. It's a good start.
