If you are having a shop do the work for you and they said the car is carburetted then you should find a new shop. If it does have a carb then the engine was likely switched. Will you restore back to an fuel injected setup? It would be worthwhile considering the value of the car when done correctly, but also perhaps very difficult to fine tune afterwards as they are very particular systems in terms of specs and few can do this setup correctly.
