Well, if the camshaft lobes look good and the camshaft isn't loose or binding, I can't see why it needs messed with. I don't think you can machine (actually grind it) it anyway because of the case hardening. If you do change it, replace the bearings (towers) at the same time.
I assume you are changing the stem seals and not the valve stems. Obviously, you have to remove the head to change the valves.
