I was following the sale of that car, almost bought it for my girlfriend. Started in LA then another dealer in Florida bought it.
You should be able to get new floor pans and maybe a trunk online. Seats are a common issue as the pads deteriorate. Solution is either reproduction horsehair from GAHH or World Upholstery $$$. Or have a local upholsterer make something out of foam. Springs can be repaired, some searching will show DIY's, and most likely its just the pads. Coco mats are a great resource for new carpeting, unless its the bottom layer with the insulation you're referring to? Interior bits can be found readily on ebay.
You can rebuild these cars from a catalog using the Mercedes Classic Center in Irvine, CA. They are incredibly expensive but can be worth it at times. I recommend emailing them to get an list of all options your car has.
