Regarding the V8-conversion, theres some topics on the board on this, do a searsch.
I have been looking at options for a SB-conversion of my W108. I prefer the SBF-conversion over an old-style chevy. The ford engine sounds better (a carburetted SBC sounds a bit "agricultural") and is also slightly smaller.
As for brakes, lager brakes doesn necessarily mean better braking, only larger thermal capacity of the braking system. Also, altering the brakes can influence the brake balance of the vehicle. Of course, so does a heavier engine in the front, so its probably wise to already instal an adjustable proportioning valve.
Matt black is a color I personally like on a car, but I even prefer glossy formal black. With matt black, maybe gray or red accents work better than gloss black accents? Anyway, lots of possibilities there! 1 thing, both matt black and gloss black get dirty very very quickly, satin black is a bit more forgiving in this regard.
