Since there is so much space in your car, I would think that many seat could fit..
But, that on the other hand, will not look that good.. But it also beats having to replace the car due to back-problems..
I put som foam in between the springs in the seat on my 83 280SE. Which made the seat much firmer, so I sisn't feel like sitting on the floor..
Cut out some strips of matress-material, and fill it in between the springs..
For you back, you could just use a small pillow with some rubber-bands on it.. (Just to keep it in place)

In my W126 I used several strips.. I put two long strips in the front of the seat,(full with of the seat)
Then two smaller on the sides, one full length, and one halv length of cushing..

They varied a bit in size, but an average of 1,5 inch in height, and 2-3 inches in with..
I also put a few smaller parts in on the outer side, due to a very weak spring there.
