engine overheat sensor test

Last year the engine became very hot at idle in a traffic jam on my 71 280se 3.5 and the radiator fan did not come on as it should.
I tested the fan and it works perfectly and now want to check the engine temperature sensor works. What is the best way to do this?

with an ohm meter, check cold resistance then check in boiling water,
Change of resistance indicated functioning.
absolute values indicate how well it works.

It is an open or closed switch.
