I need to remove my left front fender from my 72 250C (wife bashed it backing out of garage). It looks like it will bolt off quite easily but I have heard horror stories about the adhesive they used back in the 70s to bond the sheet metal together at the seams. Does anybody have any experience with fender removal from this era of cars and if so are there any issues that I should consider before embarking on this project.

Removing my fender on a 280SE wasn't too hard - unbolt everything and it comes off. However, you are correct regarding the adhesive/seam liner, whatever the stuff is. I used a huge soldering iron to heat up the seam, and with the help of a friend, pried the fender off slowly. I was pretty concerned with fires though, so if you go that route, I'd suggest another pair of eyes as a safety observer.
If the fender is a total loss, you might be able to rip it off without worying about bending it though.
