Changing ignition system

I'm restauring a 1977 MB S280, and one of my main concerns is changing the ignition - from where you put your key in, to underneath the wheel where it attaches to a round "wheel" with about 7 wires. I still haven't figured out how to get out the old one, and ofcourse I also need to install a new one.. Any idea on how this is done?

Appreciate all help!
