I am sure there were more than three posts above but yes, medium well is the only way to fly. True "well done" takes all the juices out and rare does not let the meat flavor up.

With a dad that was a butcher for nearly half a century I also got the various lectures about all the little growing things in rare meat.

Well medium rare has not killed me in 38 yrs of eating it, although there was this bad throat infection I had in the spring of '74.........

Well the '58 is at the body shop right now getting all the jambs repainted to match the new exterior paint. I have all the recovered interior pieces ready for reinstallation, waiting on the rechromed front bumper and stainless steel pieces to be done as well. Hopefully should have the old beast back on the road within one to two months.

After I get it all back together I will then focus on things that need work like the gas gauge and the oil pressure gauge. I'm sure the A/C will need a recharge as well for the summer. I also need to wire in shut off switch for the air suspension compressor so that it doesn't run so much. Old cars always need something.

I have three cars for sale right now, trying to take advantage of the stock market upswing. Lets hope it lasts.
