Evolution is concerned with the origin of species and natural selection, if you want origins of matter and energy you might seek out a physicist or cosmologist.
Why can't it happen all by itself? Why if we don't yet comprehend a thing must we attribute it to magic?
Chance on the minutest scale? You might read "Search for Schrodingers Cat" for a treatise on that subject. "Chaos" by James Gleick is another good choice. Both are physics tomes.
If you asked me my ultimate deterrant for doing evil things:
1) I found out in my life that doing good things makes me feel good. Helping others makes me feel good.
2) I want to feel good
3) Therefore I do good things.
Logical enough and no deity necessary. I am sorry for those folks who haven't figured this out yet, it makes getting along in the world much more enjoyable.
The power of the state is in a group of folks dedicated to the benefit of each other in acting civilized. Laws prevent most of us from evil doing, punishment in this life is enough for me.
I am convinced that a few centuries from now, the world will look back on religion like we look at people of Columus's day who thought the Earth was flat.
If you are correct you'll be looking down on it and I'll be in eternal torment, if I am correct you and I will not wake from our dirt nap to see it.
