I always wonder how much membrane I am supposed to take off.
There is the obvious rubbery layer that can be pulled off relatively easily (especially with hands that were trained to grab the lapels and collar of a judo-gi on someone weighing up to twice my weight), but underneath, there are still layers of softer, wet toilet paper-like semi-membrane that is sometimes fused with fat. Am I supposed to take those off as well?

Do I need to remove the membrane to a point where the rib bones are exposed?

There just isn't enough info on how much to remove and even Steve Raichen, I doubt, elaborates on this.

I know what you mean; go after it in big sheets. If you can easily get slivers left over, go for it. I don't fight it beyond that, because I don't want to hurt my meat by pulling at it too much.
