The Art of Barbeque

This may explain some stuff for y'all about why I'm so passionate about cooking (and BBQ in particular). Suffice to say, it's not just me.

Tulsa World: Best Bets: The Art of Barbeque

I'm attending this tonight to visit friends of ours who compete twice a year. Will try to take some pics.

Best Bets: The Art of Barbeque

The name says it all. In Oklahoma, barbecue isn’t something you do. It’s something you discuss, feel in your bones and, most importantly, you eat.

For Oklahomans, barbecue is an art, and it’s hard to find a place where that practice is more eloquently preached than the annual “Art of Barbeque,” sponsored by the Arts and Humanities Council of Tulsa.

For the uninitiated, here’s the lowdown: The fun starts at 6 p.m. Friday with free concerts from Mary Cogan and the Midlife Crisis Band. Barbecue will be available from Stone Mill BBQ and Steakhouse both Friday night and all day Saturday.

Saturday is the day for connoisseurs. More than 65 teams will compete for top honors in categories including ribs, brisket, chicken, pork butt and steak. The public can dig in to this ensemble beginning at 11:15 a.m. Saturday. Sampling goes until 2 p.m. and costs $10 per person, including a drink.

If you’re more interested in quantity than quality, the ribeating contest takes place at 11 a.m. Saturday.

The “Art of Barbeque” is on the University of Oklahoma- Tulsa Schusterman Campus at 41st Street and Yale Avenue.

This is how a crafty Okie gets around on BBQ day.

Team Meat. Heh heh.

Rows of heavy cooking equipment. 65 teams worth of this.

Most of these teams have fun with their names.

Any questions about how serious we are about BBQ down here?

When we arrived, our friends in the competition were finishing off some chicken drumsticks. On the night before "presentation", teams cook for family, friends, or special guests.

Fully custom designed competition smoker. Propane starter system, integrated storage, dual temp gauges per side (low and high racks), tuned to operate within 5 degrees top to bottom, front to back. Enough space for cooking enough meat for presentation in each category of a competition - ribs, Boston butt, brisket (sliced and chopped), chicken. Possibly a hundred pounds or more.

Brisket...and it's very, very damned hot.

Looks like a feast! I bet there was a time when the meat was the most expensive "consumable." I would guess that is the gas for people to come from far and wide to join in the fun, hauling all that gear, special coals, wood, ingredients and the meat these days. Jim
