Seamus knows when I use the big black box, he gets good scraps, so he's extra annoying and affectionate.
3 hours in, flipped again. Getting that nice dark brown coloring, but not being overcooked (only slight parts of the bones visible).

4 hours in, flipped for the last time. This is about as dark as I want to see them, but they need some more cooking time.

Wished you could see the steam, but look at how much bone you can see exposed from the meat shrinking. A good sign, these look great so far.
