With six chefs from the Culinary Institute of America at my going away party in NYC, I don't recall a single one using a thermometer or in anyway metering the four grills, two pits and a smoker the size of an oil drum. Oh, it was 4 gas, two wood and one charcoal if memory serves. But then again, they didn't use recipes, timers or anything else. Word of the day was cooking is messy, ugly and not precise or neat. It is the taste that counts.

The chefs lived in three apartments near mine and we were the majority of the midnight pool brigade at the building.

Since my dad was a butcher I have been dealing with this stuff since about 1960 and the very fashionable [for the time] brick backyard grill with wood. The last 18 years have been the KISS Grill since I was on the road so much. Now it is time to deal with something nice.

So, what US built brands seem to hold up best as far as structural integrity. I figure the cooking is less the grill and more me and prep.

Is strongest, best built best or is it better to get "good" and know that you will buy another one in 5-8 years?
Why not have the best of both worlds?. Duo Grill
I love my grill with the smoker. It is charcoal only and if I had seen the Duo I would have bought that one. I have had it five years and it is as good as new. The grates are still perfect. I do not have a cover on it and the paint has faded slightly, it never gets covered. but other then that it is like new.

You have to be on their favorite customer list.
The diaper pail we used during my daughter's diaper years is still on active duty. We have septic system and we are very careful about what we send down the drain.
