Here's my Favorite for year round, Works well with a small family or large groups (I did this for a Bachelor party last year for my partner and we served 25 drunk males and had enough for the after bar.
To feed 4 with some for tommorrow or later tonight
Things you will need.
Foil pan 10x16 or so, I use disposeable ones for the grocery store.
Charcoal grill (ok you can use gas, BUT DON'T BLAME ME FOR LACK OF FLAVOR)
Some saute pans with holes in the bottom. This is for grilling vegetables What ever works for you.
Whole beef tenderloin ( Cubed against the grain, it will fall apart better when cooked and chewed) Substitute your favorite steak if you want does'nt really matter
1 jumbo yellow onion,2 green peppers,2 red peppers,2 yellow peppers, bag of small cherry tomatoes, 4 cans of whole irish potatoes found at the grocery store,little potatoes about an 1.5 inches in dia.
Chop all vegs leaving the tomatoes and potatoes whole put in large foil pan with 2 sticks of butter and season with lowrys seasoning salt and "montreal steak seasoning" + about 10 turns of black pepper. Put in the oven covered at about 350 dont let those juices get away.
Season your steak the same way and let it sit for about 5 min. Take it to the grill and cook it up to about med. dont over cook it yet for you well done guys. Your vegs should be in the oven for about 30 min before you start this. Remove meat from grill and put in a bowl you can cover and keep warm. retrive the vegs from the oven and throw them in your pans with the holes in the bottom so the fire can get through. grill a little at a time if your using small pans, I have 2 so I can split it in 1/2, When the vegs are tender and heated all through ( you dont want to over cook peppers or tomatoes they will lose all their flavor,)Throw in the meat with it, not the juices though, leave them in the bowl. give it about 1-2 min with the meat, season with the montreal steak again. Pull it all off and throw it in the large foil pan dump in the meat juice stir it all together and there you go. Carefull of the tomatoes when they pop it will burn you. Enjoy its a all in one meal no need for sides and the gravey is in the pan. for large groups cook about 2 hours in advance and keep covered in the oven on low and add a can of beer for some extra juice so it doest dry out. you can marinate your meat if you want but is not required.
