Now, my dad was a butcher and I can say from experience, when you put 8oz of steak in the grinder, you get 8oz of Hamburger out the other side.
Usually, however the better the steak [such as filet mignon] the worse the burger as it has less fat content which is one of the necessary ingredients for "good" hamburgers.
Being smart is knowing the difference, in a sticky situation between a well delivered anecdote and a well delivered antidote - bear.
